Recipe of the week: mushroom soup

Ingredients: 
A quarter section of winter melon (Benincasa hispida)
2-3 fresh Shiitakes
2 bowls of chicken broth, preferably homemade
A handful of chopped shallot
Condiments: Salt and sugar

Cooking method: 
1. Rinse the winter melon off and cut into strips.
2. Lightly rinse fresh Shiitakes, discard the bottom portion and then slice the caps up.
3. Season with a dash of salt and sugar. And if you like, sprinkle with a handful of chopped shallot.
