Recipe: Superb egg soup with Black fungus and bamboo shoots

2 eggs
Moderate Black fungi and Pleurotus geesteranus
2 bamboo shoots
A handful of chopped fresh shallot
Condiments: Pepper powder, sesame oil, salt

1. Peel the bamboo shoots, remove the root and discard, then cut them into thick slices.
2. Soak Black fungi till soft, tear them into pieces, rinse Pleurotus geesteranus and tear them into strips.
3. In a stockpot, add Black fungus pieces, Pleurotus geesteranus strips, bamboo shoot slices and dump with moderate water, bring into a bowl and then maintain the heat for 2-3 minutes.
4. In a bowl, break eggs and whisk well with a dash of salt. Pour the egg liquid into the stockpot, sprinkle with a pinch of pepper powder and drizzle with moderate sesame oil. Before serving, garnish with a handful of chopped fresh shallot if you like.
