7 quail eggs
A handful of chopped shallots
Condiments: Salt, oil, soy sauce, starch
1. Lightly remove the base of Shiitake, then soak them in saline water for 10 minutes or so, after that, squeeze excessive moisture and remove them into a plate.
2. In a steamer with moderate boiling water, put in the plate and break quail eggs on top of Shiitake caps, turn on the heat and steam for at least 15 minutes.
3. In a bowl, prepare a sauce with moderate starch, salt, soy sauce and water, stirring evenly.
4. When Shiitakes are well-steamed, pour the sauce on top and sprinkle with a handful of chopped shallots. Enjoy.
